This week was ended with two intensive days showing the PERFITECH All-in-One capabilities when handling sauces with particles. From smooth dressings to sauces with tomato and onion dices, our gentle handling system provide high performance batch productions using state of the art components and technologies, such as steam infusion, single pass powder incorporation, whole pieces pumping, between others.

The setup is composed by one PERFITECH 2000, all-in-one version for hot and cold processing, using the extra exchange surface from the bottom driven reactor jacket. The system includes process technologies such as direct steam injection, vaccum, high shear homogeneizer, powder disperser system among other key tools. When hot processing, a PERFITHERM scraped surface heat exchanger can be used to cool down the product inline for shorter process times. The system provides a high capacity production rate for both hot and cold process demands, on a small footprint, where all the media and ingredient are managed automatically. A high end compact and versatile solution, made to handle most of the food products, even with particles or high viscosity. The PERFINOX solution using the PERFIPROCESS range of machinery consists in one PERFITECH All-in-One batch system, were all the ingredients are automatically dosed, mixed and homogenized.
The cooking process is performed by heating jacket and/or direct steam infusion. The vessel uses the bottom driven technology resulting in extra exchange surface and can be settled up to allow half batches without risk of burnt taste. The cooling process is performed inline using the PERFITHERM Scrapped Surface Heat Exchanger and optionally for shorter process times, using the PERFITECH jackets. The cleaning process is done fully automatically using a PERFICLEAN CIP station. A full package using our technology that can be fitted with several options or even other process machines for different products and applications. A PERFINOX installation for high performance continuous production at a major sauce manufacturer, where our all in one machine PERFITECH performs the solid and liquid ingredients dosing and mixing, and then the hot processing, using heating jacket or direct steam injection. After the cooking process, the product is discharged through the PERFITHERM Scrapped Surface Heat Exchanger, for fast cooling processes and gentle product handling. Once the production cycle finished, the piping is scrapped by PIG system from the PERFITECH to the filling line, resulting in virtually no product losses. After pigging all the system is cleaned by our PERFICLEAN CIP system. An intelligent and complete solution, using only machines from our PERFIPROCESS range. |
